I need to change my Apple ID as it was set up years ago on my dads email address. I need to stop being associated with this email address but if I change it, will I lose all the apps I have like Instagram. Will changing the email be like wiping all my apps and starting from new?

No nothing will change. That is the point of being able to edit the primary email address to keep it set to an in-use, active email address. Changing your AppleID changes nothing about any of the Apple accounts tied to it (iCloud, iMessage, FaceTime, the App, Music or book stores, etc).
What you don’t want to do is make a new AppleID with a new email, as that then also creates all new Apple service accounts for everything and nothing from your current AppleID can be transferred to a new AppleID.
