How do I regulate whether it uses contact information and/or previous names and passwords in Safari.

Hello!

You can edit and add e-mail addresses and password by going into Settings > Passwords

You might need to authenticate using TouchID or FaceID depending on your device.

If you completely want to turn off this feature you can turn off the switch by tapping 'AutoFill Passwords'
