I paired gps+cellular Apple Watch series 6 with my iPhone XS Max with eSIM number. I wanted Apple Watch to work independently as far as incoming and outgoing are concerned. Is this possible in India?

Second question is, I wanted to have separate Apple ID between iPhone and paired Apple Watch. Is this possible?

No that is not possible to either question.

One Apple ID for both your iPhone and Watch
