factory reset back to sierra

Mac Mini had Sierra originally, updated incrementally to Catalina. Want to go back to Sierra. When a factory reset is performed will the result be Sierra or High Sierra?

Restarting to your Recovery HD using Command-R should reinstall the original OS that came with the mac.
