Can't change Apple TV 4K resulitions after choosing a SD resolution - 4K Projector and CRT

Hey everyone. I'm trying to use my Apple TV 4K with a 4K projector and also a HDMI to S-Video converter to a CRT TV, and I found a very annoying bug. The Apple TV was originally set to 1080p, and it was working fine since my receiver can convert 1080p signals to 480p for my CRT. However, I was experimenting with resolutions to find a more native resolution, and while experimenting, I picked 1024x768, and now I can't switch back to 1080p or ANY other resolution. Ideally, I'd actually like 640x480 because that's the native resolution of my CRT, but now everytime I try to change the resolution, the Apple TV 4K just says:

"There was a problem changing the resolution to 480p - 60Hz YCbCr 4:4:4. Your TV may not support this resolution or refresh rate."

The Apple TV saying it can't display at 640x480 on a SD CRT is pretty rediculous to say the least. But again, this is the same error message for other resulitions too - just replace 480p with 1080p, 720p, or whatever. This doesn't make any sense - especially since I had it set to 1080p before in my CRT setup. It's just like the Apple TV 4K is just stuck in this 1024x768 resolution I tried out.

I have tried to hit the "Reset Video Settings" button, but that does nothing - it just resets back to 1024x768. I've also tried unplugging it and replugging it, but without sucess. :/

The weird thing is when I connect to a CRT TV with a HDMI to analog RF adapter, it does let me change the resolution to 480p.

I think the underlying issue is when you choose a SD resolution on the Apple TV 4K, you can't change back to HD (or any other resolution). For example - I actually have had a similar problem connecting the Apple TV 4K to my 4K projector through a Denon sound receiver too. I selected 640x480, and it now it won't let me go back to 4K because it said my projector wasn't capable of 4K. What a joke!

Anyways, it appears there is a software bug that is preventing the changing of resolutions once you pick a lower resolution. Does anyone know how I can force any resolution I want (and know my TV/projector DOES support)?

Thank you in advance. This has been very frustrating since now my CRT and 4K projector are at the wrong resolutions and I can't switch back.
