Big Sur is a very complicated download and installer.

The download is huge and it seems to "test" the previous portion often.

Let the download take as long as needed. Do not think that it has "stalled" and restart the process.

Run the installer overnight.

Shutdown computer via Power Button and connect to charger. Disconnect All external devices. Restart computer and Immediately hold the - Shift - key. This will startup in Safe Mode and do a Repair Disk, clear cache Files and only load Apple Software and Fonts. So, it will load slowly - Normal. This may or may not allow the update to complete it installation.

PS - is there any AntiVirus Software installed? If Yes - this crapware is going to interfere with the update process. Strongly suggest removing it as per the Developers Instruction. Effective defenses against malware and other threats
