How to highlight an email instead of flagging it?

Years ago there was an option in Mac Mail to highlight an email. It made it very easy when scrolling through hundreds of emails to find the one that was highlighted. And, although some of those emails still show highlighted in my Mail app today, it seems the ability to highlight new emails has gone away. Is this true? Here is an example of what I'm referring to:
