The cursor keeps changing from one thing to another when trying to adjust a keyframe at the beginning or ending of a clip... is there some way to stop it or take it out of automatic mode? It's very frustrating. I could just drag the opacity tool, but I want to be able to change from linear to ease.

I can only suggest that you use command-= to zoom in the timeline a little (or a lot).
I discovered that if I use this key combo, Option+Shift I get a different cursor that works better for keyframing... Does anyone know what to call the cursor above in the attached png?
I don't think the Shift key is doing anything.
When you hold Option key with the cursor near the adjustments for this (or other parameter), the cursor changes to allow adding new keyframes. When you hover near an existing keyframe the cursor changes on its own without having to hold any modifier.
