My MIL locked herself out of phone and forgets email/password

I'm not sure what this 73 year old woman has done, but she's managed to disable her iphone. I went over her house and called apple support. They instructed me to restore the phone to factory settings by plugging it into the computer using iTunes. She doesn't have a computer, so I took the phone to my house to do it. It worked... But now she doesn't know her correct apple id or password. And doesn't even know if she has an email account. I know she does, because I wrote them down for her when she first got the phone, but she's misplaced them. Is there ANY WAY we can get into her phone now? All we have is her phone number, pretty much. Other than her name, obviously. And she would clearly know the answers to her security questions. I just don't know how else to go about this. I've had her phone at my place for hours and I am truly stumped.

See if you can recover the ID/password. Use every email address you can think of.

Apple ID - How to find your Apple    An iCloud e-mail address is an Apple ID.

Apple ID - Find

If you forgot the Apple ID password, enter the Apple (iCloud) ID, and click Forgot Password. See if you can get an email option if necessary.

Apple ID - Manage

Apple ID – Forgot Password

If necessary, if she is the original owner, have her contact Apple. Apple can remove the ID  if provided the required paperwork.

Request additional support for unlocking your device

Either take the device, the original purchase receipt with the serial number, and a photo ID to the nearest Apple Store (if it has reopened)
