My number set up on 2017 has changed a while ago but it still links to my Apple ID. And I’m asked to change it to the new one, which I did. But my new number appears to be an “invalid number”, I don’t understand why. I’ve been using this number for a year I know it’s a valid number, is it because of something else?

It looks like you're having issues verifying your phone number to use with your Apple ID.
Use your mobile phone number as your Apple ID
The section "Change your Apple ID to a different mobile phone number" should help.
