That is not a feature in Numbers. All I can suggest is to enter the year, month and day in this table:
Formula in E2: IF(OR(B2="",C2="",D2=""),"",DATE(B2,C2,D2))
The "IF OR" keeps column E blank until columns B, C and D contain values.

You get close to a date picker on iPadOS.
Tap 'today' and then + by month, etc.
On MacOS, Numbers is less convenient for inserting dates, but you can insert today by clicking a cell going to Table > Insert Date (or using the keyboard shortcut.)
