How do I access the start up menu? ( and why do programs keep adding themselves to the start up?)

Each time I start up my MacBook, I get other unwanted / unneeded programs opening up. (Pod casts, Apple Music, etc. I have followed instructions of how to find the start up menu, (system preferences,, users and groups, and it shows my ID as admin). But there are no apps listed for me to opt out of. When I click on the "dog house" labeled log in options, I get how various users need to log in, but nothing showing the start up list or allowing me to stop apps from starting unbidden.
So, did I take a wrong turn somewhere, misunderstand directions or am I stuck with Music, podcasts, etc. starting up and then needing to be individually closed?
When shutting down or restarting, make sure "Reopen…" is unchecked.
Check System Preferences > Users & Groups > Login Items. Remove any you don't want. Most apps have a setting in their preferences that allow you to choose whether to start them or not.
Any apps that are open when shutting down will reopen when starting up.
