Change gray dots
How can I change the gray dots on the calendar to help with Appointments so I don’t have to click on all dots.

It sounds as though you have multiple Calendars appearing in the Calendar application, and not wanting to have all the calendars sync to the iPhone so you can view your appointments or Calendar events. If you're not wanting your Calendar events to sync to various calendars, you can choose which even the calendar is associated to when creating that event.
