Can I still use iTunes to transfer songs into my music library? I am not subscribed to Apple Music but I transfer songs into my iTunes from music CD’s or YouTube, is that possible now?

Nothing has changed. You can still use iTunes to import songs. You don’t need to subscribe to Apple Music.
The only recent change is that the music app replaced iTunes on MacOS Catalina and Big Sur.

Thank you very much, I use a MacBook Air with iPhone 6, I haven’t synced my music with iTunes in a long time fearing in case I lose my music now that things have changed but you’re saying there’s no need to right? And I can transfer music the way I used to earlier right?
