I have started a group text but when I follow the directions to add a group name: by clicking the icon on phone or iPad it only shows who is in group. Does not provide a way to add the group name or even add additional people to text message

With your question, there is a Related Article. Actually, that normally appears as a support document you were looking at when you asked your question. Non-iOS users are SMS/MMS and those cannot be named because they are controlled by the cellular carrier. Apple has no control over that.
Did you see the part of the above article that states:
”You can name only group iMessages...”
I did not see any article about this.. Kind of silly if you have friends that do not own iPhones, but need to be in the group.
