Disable for what purpose - everything, or just for specific functions?
If you wish to completely disable all TouchID functions, simply remove all registered fingerprints from Settings:
Settings > TouchID & Password > [Fingerprints] - tap/select a fingerprint “, then select Delete Fingerprint
Repeat for each registered Fingerprint.
If instead you wish to disable a specific TouchID integration, they can be enabled or disabled:
Settings > TouchID & Password
