Can you block/unblock someone in a group text?

You can certainly block someone:

Block phone numbers, contacts, and emails on your iPhone, iPad, or iPod touch - Apple Support

However, they will be blocked from sending you anything, not just the group text.

IF it doesn't show up in an Apple supported document, then there isn't a way to do that.

Blocking them won't prevent them from receiving a message. It will only prevent them from sending one to you.
