All social media is open to attack and stalking but that is the responsibility of the platform providers and your so-called privacy settings.
No, you will not know if companies like Facebook Amazon or Twitter are following you but you can bet they are follwing your interests, browsing and buying habits. It is called data mining and goes back probably 25 years.
The iphone itself is secure.
