I cancelled a subscription in December and it tells me that this has expired on my apple account yet this payment is still going out every month. How do I stop this? As according to apple it is already cancelled.

Follow the steps in this article:

If you see apple.com/bill, itunes.com/bill, or an unfamiliar charge on your statement - Apple Support


If you still can't find out what made the charges,

Contact apple by the link in that article.
