How can I flip the camera while I’m recording?

That is not an option in the native Camera app. There are some apps in the App Store that can allow those types of actions. I have tried one called DoubleTake. I'm not sure if it is still available, but it allows for recording from both the front and rear cameras. There may be others if you do a search of the App Store.
