From our understanding, when using your iPhone to screen record, it is only recording at 30 fps. We can certainly understand your concern and can help provide some insight.
To ensure you are getting the best performance out of your device, it is always best to keep it up to date. The first step would be to backup your device, then update it following the steps here: Update your iPhone, iPad, or iPod touch - Apple Support
After updating, if it is still recording in 30 fps, go to Settings > Camera > Record Video > Auto FPS. Make sure this is set to “Auto 30 & 60 fps”.
