Which All-in-One Printers are compatible with Big Sur? I want to be able to scan and print.

Mac mini 2018 or later

Any ones that support both AirPrint and ICA (image capture architecture).

Ensure they do not require software that somehow enables those interfaces.

What about scanning documents? Does the AirPrint apply also?

Yes, if the listed model has scanning capabilities. My Canon MG7720 all in one scans wirelessly with Image Capture, Preview, VueScan and the Canon software.
