To delete a mail account from your iPhone go to settings > mail > accounts.

Then tap the account you wish to delete and press the red button labelled “delete account” to confirm.

That's the method for a non-Mail account such as Gmail, but it's not the same for Apple's Mail. The iPhone mail isn't syncing with the Mac mail & after checking on all the fixes for this, it seems the best way is to delete the iPhone mail & add it back again.
