how do i set up a separate icloud account for my child on a separate iphone?

I have given my iphone XS to my son and want to dissociate it from my iphone. We use family sharing. I want to be able to erase my old apps on that phone (i now have them on mine) and for him to set up his own face recognition and passwords. Please help. Thanks in advance.
