Stuck at "Checking Null" while upgrading to Big Sur on MacBook Pro 2017

I did a hard drive wipe and I am now trying to reinstall Big Sur on my MBP 2017 128gb. After the restoration my MPB started with High Sierra, so I updated to Mojave - that went smoothly.

But when I am trying to upgrade to Catalina or Big Sur it keeps on getting stuck at "Checking (null)" (from Program updates) after I accepted the License etc. I tried to do it via CMD + OPTION + R to Reinstall the latest version, but when the Big Sur upgrade program starts, and I get to choose which hard drive to install it on, there is NONE hard drives to chose from! (See picture)

I feel like I have tried every advice I could find by googling and in apple forum but it just doesn't work...

Please help :'(
