Apple Watch - Full Activity not registering correctly

I just completed a 2 hour 31 minutes outdoor walk and my watch has only registered 59 minutes, when going into the actual walk on my phone it has registered the full time. This is not the first time this has happened and is very frustrating. I have also tried all the trouble shooting as mentioned online. Do you know why this is?
