I`m just starting with discovering drones, so maybe someone can tell me what should I look for in iPad or iPhone controlled drones? And also if there any differences between using it on iPhone 8 either on iPhone 11?

A drone that uses just a Bluetooth connection is not going to go very far and using it with the iPhone as the main controller will be very limiting. You really have this question backwards and are in the wrong place, look for a drone YouTube channel, website, Facebook page, etc. and ask your questions there.

If you can‘t connect a Bluetooth accessory to your iPhone, iPad, or iPod touch
There shouldn't be any differences between an iPhone 8 and 11 if they are both on iOS14.
