Will iOS 14 automatically delete old software in order to create new space for a software update on my iPhone 7 Plus 32 gb variant ?

It won’t automatically delete anything, unless you have Offload Unused Apps enabled.
When you update iOS the update will replace the version on the phone. Likewise when you update apps. But it will need enough free space to download the update; for iOS that’s about 3.5 GB of free space. For apps about twice the size of the app.
