does my iPad Pro second gen have a limit on screen recording time or are you in screen recording , I need at least two hours and 45 minutes to screen record. So does anybody know if I’m going to be able to record that long or if it’s going to shut off not record audio etc.

The limit is the storage on the device.
You will not make a 3 hour recording because you don't have enough room to create the file.
You may be able to make 30 minute "chunks" and assemble the final product on a computer. You would have to delete each chunk before you can start a new one.
