If I remember correctly, you can go to About This Mac, just under the Apple logo and open it. The window there is where you can unsubscribe. If it isn't there, then go to System Preferences and look for the unsubscribe option under Software Update.

FWIW, iTunes was split into three apps as of Catalina and exists no longer. It has nothing to do with betas.
