I can’t select other skin colors on any emojis other than the defult yellow. Such as these 🙂😘🙃. You should be able to tap and hold down on the emoji and different colors should appear, but only the default shows up. Any way to fix this?

Only certain emojis (people/hand emojis) have skin variants. Such as these ones, 👩🏻👦🏾👨🏽. The ones you provided do not have other skin variants.
But yes, you can hold down on an emoji and select a skin color on compatible emojis.
