'Have begun using PAGES - but any document saved cannot be seen in 'Recents' (it appears to show the most recently used templates only).
I am now unsure if 'Recents' means ones recent documents OR if it means recently used templates?
Any ideas anyone how Recents can be made to how me my own recently saved documents: nothing in 'Preferences' relates...

The template chooser is showing you just the recently selected templates. That is its sole purpose.
If you want to see recently opened documents that is File menu > Open Recent menu. You can control the number of items on that Recents sub-menu via the System Preferences > General panel.
