I understand the problem you are having and I will begin asking some questions followed by giving some possible solutions.

Have you tried using another wifi connection or cellular data and if so does the same problem occur?

What happens when you try uninstalling Mail and reinstalling it again?

Have you tried restarting the iPhone? Or a perhaps a hard restart?

Have you attempted a reset of the settings?

1. Go to Settings app > General > Reset > Reset All Settings.
2. You will be required to enter your passcode.
3. After entering your passcode, the reset will start.

You're probably asking what is “Reset All Settings”? Just as the name implies, by selecting “reset all settings”, there would be a reset of all settings on your iPhone to default, including all network settings and personal preferences.

Will you lose data? Only your system settings will be reset. You will not lose any apps, data, documents or files.

After completing a settings reset it is best to see if the problem still occurs.

If you're ready and if you want, then you might want to factory reset the device. It best to make a backup before you try this option.

If the problem persists after a factory reset, then I would advise you to contact Apple Support immediately.

What is the language that has been set under Settings > General > Language and Region > Language

Does the language appear for any another activities?

Have you tried Gmail app?
