I want Apple Music payment to only come out of my credit card on file, not from the money that is in my account. How do I do this?

See the footnote at he end of the 'How to change your payment method on your iPhone, iPad, or iPod touch' section in:

"Apple will attempt to charge payment methods in order from top to bottom. You can't change the order in which Apple ID balance is charged."
