My apple watch does not turn off sleep, it is constantly on and uses the battery quickly, this has happened after the last update

What Series watch do you have?

The Series 5 & 6 have an always on function that you can turn off if you like.

From your iPhone>Watch>Display & Brightness>Always On>Turn this off.

If this is not the problem, have you tried a forced reset by holding in the side button and the digital crown for 10 second until you see the Apple logo then release.
