Sim card

My husband erased The content on his iPhone and returned it to his former employer. He forgot to take the Sim card out. Will they have access to his old information if the Sim card was still left in the phone?

No. The iPhone doesn't put any data on the SIM card; if it was previously used in a non-Apple phone, it may contain his contacts.
