How do I insert a signature into a document on Apple MacBook Pro?

You can capture your signature in Apple's Preview application, via trackpad, compatible IOS device, or by scanning your signature previously written on an index card, and held up to Preview for recognition. You then apply it as an annotation to a PDF.
Once you have the PDF signature annotation, you can press shift+command+4 and drag the cross-hairs around your signature to select it, and then release to place your signature on the Desktop as a screen shot. Now, you have a image signature that you can drag/drop, scale, and position in Pages.

As an image captured from a digitizer tablet and dropped into Pages. I don't have one here, so cannot test if a digitizer would work directly with Pages v11.0.
