How do I use screen time controls to prevent my kids from disabling location sharing? The menu in iOS 14 looks different and the option is ambiguous...

The linked article describes the settings on the childās device, which are different from controlling screen time settings from a family organizer point of vantage. However, (fruitless searching) some trial and error later, I figured out the strange menu wording, so Iāll answer my question here:
On the *Family Organizerās* deviceā Under Screen Time > (Family Member) > Content & Privacy Restrictions [On] > subheading āPrivacyā > Share My Location [Donāt Allow]
It seemed to me this meant they couldnāt continue to share their location, since the *next* subheading is titled āAllow Changesā with Allow/Donāt Allow options. Actually the opposite, it locks the setting as is.
Hopefully that helps someone who was trying to do it from their own device. Seems silly to word it as is, but oh well. And yes ā anyone could turn off their phone. But that would defeat the purpose of having a phone. 🙃

What is it you don't understand n the 'Allow changes to privacy settings' section of:
Use parental controls on your child's iPhone, iPad, and iPod touch - Apple Support
One problem is that the kid can always turn the iPhone off to disable you from seeing his location.
