Apple mail signature

I have a problem with my signature in Apple Mail app with HTML. I've created signature:

but I have a problem with polish letters - Apple mail don't generate my HTML signature with polish letters in my mail signature:

I'll be grateful for your help. :)

Ps, I have macOS Big Sur (ver. 11.2.2) and MacBook Pro (16-inch, 2019).

2023 - My signature disappears as soon as I put in someone's email address. When I start a new email in Mac Mail, my signature is there, the minute I hit "enter" on an email address that autoloads, my signature disappears. It's really really frustrating. Anyone know how to fix this?

Apple mail html email signature image not showing in preview Hi! It seems like a known issue but I'd like to understand if there is a work-around and/or if this is an issue that is planned to be addressed soon. When creating an HTML email signature with an image and copying this signature into apple mail, the image does not display properly. However, when sending the email, it is delivered correctly. Although it worked in the end, I was concerned and almost didn't go through the process of sending a test email because I thought that the signature was broken. Thanks!
