Click here and follow the instructions. The applications will be redownloaded from the App Store afterwards if they're still available there.

I highly recommend a full transfer, especially if you have drawing apps with your gallery, which will then bring your full gallery over to the new phone.

Then you can delete any of the items you don't want or need on your brand new purchase.
