How to restore iPhone via iCloud to an earlier date?

I restored my iphone to an earlier date/backup using iCloud and it still it sank with the latest backup available on iCloud.

I am trying to restore (a note) from March 28 that was deleted after 16:00 on the 12th of March.

I wanted to restore my iPhone to 6th of April via iCloud and so I choose not the latest backup from the 12th but the one before that.

Still my phone sank with the day on which I did the restore 12th of April instead of taking me to the way the phone was on 6th.

What setting should have I disabled to achieve the older back up, so my phone looks exactly like on 6th of April?

I am guessing its just synching/updating from the iCloud info which is up to date, instead of working like time machine.

Any ideas on how I can still recover that note from March 28?

(I have no other back up btw march 28 and April 6, (my current phone is set as that but it looks like April 12) which doesn't contain the version of the file I am looking for.

tu for any ideas you might have or any thoughts on how it could have worked.

Also, before I start the restore I had two backups on April 12 one from 15:00 and one from 21:00; when I reset the phone the back up, the one from 15:00 was no longer available- it was not in iCloud back up options drop down menu when I was choosing the new reset options, but it was there before i reset the phone, so I checked as instructed on many videos prior to beginning the process. So even if it says is there, but is not….how can one be sure….

I had only one option to choose from 21:00, and the 15:00 was gone, tho I did two back ups on the 12th.

Very dissapointing

Notes aren't part of the icloud backup, as they are synced to whatever mail or cloud program you use.
