do I have to pay monthly with Apple TV app to watch shows and movies for free like Hulu and Netflix? Or do I pay for all the movies and shows separately?

If a show is part of a subscription package, you pay for that bundle, or use a free trial if one is offered. Otherwise, you pay for that item individually.
