Has anyone been successful in using a Mac Mini M1 version with older Apple Cinema Thunderbolt displays? If so, were you able to use a thunderbolt to usb-c adapter to connect both monitors to one usb-c port or were you able to connect to both usb-c ports on the Mac mini M1?
Cannot be done period. Apple Thunderbolt Displays can only
be connected to Thunderbolt ports. There is no adapter, tweak,
or magic wand that will change that fact. Also, the new M1 Mini
can only support a single display on the Thunderbolt Ports, period.

Thunderbolt Display inputs are not Mini Display Port inputs and
cannot work! Thunderbolt displays can only be connected to
a Thunderbolt Port ,Period, end of story.
The OP made no mention of an iMac in Target Display Mode.
There is a workaround using adapters for the HDMI and USB-C ports which gives dual displays.
