How do i erase Apple watch from my phone to pair a new one of my Apple Watch is completely smashed and unusable?

See the 'How to unpair your Apple Watch from your iPhone' section in:

Unpair and erase your Apple Watch - Apple Support

or with a web browser, go to: https://www.iCloud.com and sign in with your Apple ID. Open Find My iPhone and select All Devices (at the top). Then click your Apple Watch, select 'Erase Apple Watch', and select Next until the device is erased. Finally click "X" next to remove your Apple Watch.

To unpair and erase watch and remove Activation Lock.

On a computer, go to iCloud.com and sign in with your Apple ID.

Go to Find Iphone.

Select All Devices, then click your Apple Watch.

Click Erase Apple Watch.

Select Next until the device is erased.

Click the remove button next to your Apple Watch.

Then go here;

Pair the watch with my new phone.
