If the delete option is not there, try this:
Settings, Screen Time, Content and Privacy Restrictions, iTunes and App Store Purchases, Deleting Apps, Allow “on”
or turn screen time completely off.

Screen Time idiotic? I agree. Waste of space, and new restrictions added themselves in ios14 in many cases. But there we go.
