pairing issues

I have been trying all morning to get my old watch, and new phone to pair. I've updated both devices, started to pair and then the phone gets stuck in "software update" mode for hours. I'm trying to get help but it wants a serial number. I can't get the serial number because the phone and watch are stuck in pair mode. This is so frustrating and reminds me why I gave up on the Apple Watch. I've turned off and on each device 5 times already, done the reset etc. and still can't get the phone to recognize my device. I'm stuck !! help please!

To unpair and erase watch and remove Activation Lock.

On a computer, go to iCloud.com and sign in with your Apple ID.

Go to Find Iphone.

Select All Devices, then click your Apple Watch.

Click Erase Apple Watch.

Select Next until the device is erased.

Click the remove button next to your Apple Watch.

Then go here;

Pair the watch with my new phone.
