My iPhone 11 Pro will not pair with my computer. Says this device is not supported.

Correct, this is expected behaviour.
What are you hoping to accomplish by pairing?

Note that “pairing” in the traditional sense is not required to use the hotspot function.
In past I have been able to use the mobile hotspot on my phone to get my computer on the internet when traveling. Suddenly stopped allowing them to pair. Didn't have this issue till recently.
