why can't i leave a text conversation?
I don't have the option to leave a text conversation. I have the iPhone 11 Pro Max. iOS 14.5

This would be because not every person in the conversation is using iMessage, meaning they are Android. If even one person is not iOS in a group text, there is no way to leave the group. You can't add someone to a group once set up either for the same reason. This is controlled by your cellular provider, not Apple.
