If you are using the iCloud Photo Library, your photos are not "backed up" and previous versions of your photos are not available.

Your photos are synced with iCloud and all edits are synced in real time and there are no previous versions in iCloud.

What do you see in Settings > [your name] > iCloud > Photos?
