Looking to use my 2010 White MacBook as part of my setup which has dual displays. I was wondering, would a USB to VGA adapter like this one work for my MacBook?

I'm not certain. You can connect at least one to it. As for more, it may or may not - try it out by connecting each device to its own port.

USB A will not Work.
What exactly is the model of your Mac? Dual output may not be an option, though mirroring may.
